Big Easy Bread Pudding

This recipe proves that leftover bread can easily be converted to dessert without much work!

Ingredients:

1 loaf stale French bread cut in chunks, set aside
2 tsp vanilla
1 c raisins
1 c crushed pineapple drained
1 can drained peaches
1 1/2 c fresh chopped apple
4 c milk
1 c 8.5oz coconut milk
1 14oz can condensed milk
1 c half & half
2 c sugar
8 tbs butter
1 tsp cinnamon
1 tsp cardamom
1 tsp nutmeg
4 eggs.

Directions:

  1. Combine all ingredients and mix well, pour over bread chunks, bread will soak up the mixture, it should be moist but not soupy.
  2. Pour in buttered 9×12 baking pan or larger.
  3. Place in oven at 350 for approximately 1 hour and 15 minutes until top is golden brown.

    Tip: Serve with or without Whiskey or rum sauce.
